Easy & Instant Egg Curry
EGG CURRY is an easy, instant, mouth watering dish. It is spicy and deliciously made from boiled eggs and mixed masala paste. This was first introduced to me at my friends place. In India eggs play an important role and are used in various dishes like biryani and curries. People love to make bhurji, omelette. One such variation is the Spicy Egg Curry. Being a heavy dish you can have it in lunch and dinner both. You can have this amazing dish with chapati, bhakri (form of chapati) or rice.
Ingredients needed:
6 - 7 Eggs
Oil
Coriander
Garam masala
Ginger &
Garlic
Coconut
(Dry)
Onion
Tomato
Turmeric,
Red Chili powder
Cumin powder
Pepper
powder
Salt to
taste
Method:
Take some
water and boil the needed number of eggs, cook them for 10 - 15 minutes on medium
flame. Peel off the coverings or add them to cold
water and set aside for 5 minutes. Do not cut the eggs till they are normal.
Egg curry paste method:
Heat oil in a pan and add the chopped Onions until it becomes Golden Brown.

Take some dry Coconut in a pan and roast until it becomes Brown and add it to the grinding bowl.
Add some
Green Chili, Ginger, Garlic, Coriander, Onion (Golden Brown),
if needed some Cloves and mix it well in a grinding bowl till it becomes a thick or thin
paste as you want the gravy to be.
The paste of gravy will look like this, but depending on the ingredients used it may change.
Final Preparation:
First heat some
oil in a pan and add chopped Tomatoes, mix it well. Add the masala (gravy)
sauté till it becomes a little soft. Now add Chili powder, Coriander powder,
Cumin powder, Pepper powder, garam masala according to taste. Sauté it well for
2 - 3 minutes. Add salt to taste and stir it. Now add the eggs and then add ½ cup
of water and make it boil in medium flame closed for 2 - 3 minutes.
Finish it with suitable garnishing and serve it hot!
Preparation Time: 45-50 minutes.
